Stuffed chicken with gravy is one of the Malabar specialties. It is cooked without an oven and the thing you need is a non-stick big pot. No need of much more efforts to make and of course; it is one of the menu for special occasions. One method of stuffing is; directly fry the stuffed chicken and put it in to the gravy. One another method is; place the stuffed chicken in pressure cooker without adding any water and cook it for 2high whistles. After that; is poured in to the gravy and cook for few minutes to tie up with the masala.</p>

<p dir="ltr"><b>Preparation:</b></p>
<p dir="ltr"> Wash and clean the chicken; cutout the extra fats (drain it completely for few minutes.).<br>
Make small slits on the chicken to absorb all the masala.<br>
Marinate with the above marinating ingredients and keep refrigerate for 4 hours.<br>
For the gravy; heat oil in a pan in a large pan (enough space to cover the chicken).<br>
Add chopped cashew nut and roast for a minute.<br>
Add onion; Sauté onion till transparent.<br>
Add ginger garlic paste, curry leaves and green chilly; sauté until raw smell goes off.<br>
Add salt, and coriander leaves.<br>
Take half portion of the gravy and stuff it inside the chicken along with two boiled eggs.<br>
Tie the chicken legs in opposite direction to close the hole (you can also sew it with a long thread and needle; remove it after finished cooking).<br>
In the remaining gravy add turmeric powder, coriander powder and garam masala.<br>
Add chopped tomatoes and sauté well until all the tomatoes are cooked well and disappears in the gravy.<br>
Add ¼ cup of hot water in to it; when it starts boiling; add the marinated stuffed chicken in to it.<br>
Cover the lid and cook in low flame for about 30-35 minutes (open the lid in each 10 minutes and flip the four sides.).<br>
At last open the lid and dried out all the water to get thick gravy.<br>
Serve hot with ghee rice or roti.</p>

Marinate the chicken with ingredients under marination for 2 hours in fridge.<br>
Heat oil in a non-stick pan; add the marinated chicken pieces in to it.</p>
<p dir="ltr">Cover and cook it for 10 minutes on medium flame.<br>
Turn the other side.</p>
<p dir="ltr">Spread the chopped onion, ginger, tomato and green chilly on top of it ( don't mix).<br>
Cover cook for another 10 minutes.</p>

cook on high flame for about another 7-10 minutes on high flame until all the masala get dried well.<br>

Fry it in hot oil on low-medium flame until both sides are brown in color.<br>
When the chicken is half fried; <br>
Add 3 strings of curry leaves in to it.<br>
When it is almost done add the roundly cut onions and slit green chillies.<br>
Take out all these from oil and put it on a serving plate.<br>

For the roti / wraps<br>
1 heaped cup atta / whole wheat flour<br>
salt little (optional)<br>
⅓ cup water (can use warm water/ buttermilk)( adjust as needed)<br>
1 tsp oil (optional)<br>
For the filling<br>
1 medium potato cubed (replace with any veggie)<br>
1 cup veggies of your choice (capsicum, peas, cauliflower, carrot etc)<br>
1 tbsp oil<br>
½ tsp cumin<br>
½ tsp mustard (optional)<br>
Pinch of hing / asafoetida<br>
1 onion thinly sliced<br>
½ to ¾ tsp ginger garlic paste or grated ginger or minced garlic<br>
¼ to ½ tsp garam masala<br>
½ to ¾ tsp coriander powder<br>
¼ to ½ tsp red chili powder (adjust as needed)<br>
Generous pinch of turmeric (prefer organic)<br>
salt as needed<br>

How to make kathi rolls recipe<br>
1. Steam or boil potatoes. I used 1 large potato, washed, peeled and cubed. I steamed in pressure cooker until just done.<br>
2. If you know how to make roti, you may skip the first few steps of making them. Add 1 cup atta to a mixing bowl. Sprinkle little salt. I usually do not use salt.</p>
<p dir="ltr">3. Add 1 tsp oil and little less than 1/3 cup water. Oil is optional. You can also use buttermilk to make the dough.</p>
<p dir="ltr">4. Mix it to a dough. Knead well until it looks soft and pliable. Cover and set aside until the filling is ready.</p>
<p dir="ltr">5. Heat a pan with oil. Add cumin and mustard (optional). When they begin to crackle, add hing.</p>
<p dir="ltr">6. Add sliced onion and sprinkle salt. Saute until they slightly discolor.</p>
<p dir="ltr">7. Add ginger garlic paste.</p>
<p dir="ltr">8. Saute until the raw smell goes off.</p>
<p dir="ltr">9. Add the mixed veggies. I used aloo, green peas and capsicum. If using leafy greens like palak or methi, you can add them too now.</p>
<p dir="ltr">10. Add turmeric, red chili powder, garam masala and coriander powder. For the kids’ I generally use less garam masala and more coriander powder and saunf powder.</p>
<p dir="ltr">11. Mix everything well and saute for a minute.</p>
<p dir="ltr">12. Cover and cook on a very low heat for 2 to 3 mins until the capsicum partially cooks. Set this aside. While these cook, I finish making the fresh green chutney. You can find the recipe of green chutney here. Sometimes I skip making the green chutney and use the chutney I make for my idli dosa.</p>
<p dir="ltr">13. Allow this to cool. Using hot filling to make kathi rolls will break the roti quickly.</p>
<p dir="ltr">14. Divide the dough to 4 to 5 equal parts. Shape them to round balls.</p>
<p dir="ltr">15. Dust the rolling board with flour. Flatten a ball and sprinkle flour over it on both the sides.</p>
<p dir="ltr">16. Begin to roll it evenly to a round shaped layer. Set this aside and continue to make the rest while you fry them.</p>
<p dir="ltr">17. Heat a tawa / griddle. When it is hot enough, transfer the roti to the pan.</p>
<p dir="ltr">18. When you begin to see the bubbles, flip it and press down gently.</p>
<p dir="ltr">19. Flip it and cook on both the sides until golden to brown spots appear. You can add ghee or oil at this stage. Spread a kitchen cloth or tissue over a plate. Transfer the cooked roti to the plate and stack them.</p>
<p dir="ltr">20. Smear the chutney as much as you like. Make sure the chutney is thick else the roti will turn soggy and break. You can also use fresh veggies like shredded cabbage, onions and carrots.</p>
<p dir="ltr">21. Fold one edge of the roti towards the inner side. Begin to roll it tightly. Use a tooth pick to hold the kati roll in shape. You can also use a foil to wrap one end of the rolls.<br>

Add the garlic, ginger, chilly, fresh coriander and half the flaked almonds. Pour in the water and process to a smooth paste. Transfer the paste to a small bowl and set aside.</font></p> <p><font size="3"> Finely slice the remaining onion into rings or half rings. Heat half the ghee or butter with half the oil in a heavy flame proof casserole and fry the onion rings for 10-15 minutes till they are deep golden brown. Transfer to a plate with a slotted spoon.</font></p> <p><font size="3"> Fry the remaining flaked almonds briefly until golden and set aside with onion rings, then quickly fry the sultanas until they smell. Transfer to the plate.</font></p> <p><font size="3"> Heat the remaining ghee in the casserole with a further 1 tbsp of oil. Fry the cubed meat, in batches, until evenly browned on all sides. Transfer the meat to a plate and set aside.</font></p> <p><font size="3"> Wipe the casserole clean with kitchen paper, heat the remaining oil and pour in the onion, spice and coriander paste made earlier.</font></p> <p><font size="3"> Cook over medium heat for 2-3 minutes, stirring all the time, until the mixture begins to brown lightly. Stir in all the additional spices, season with salt and ground black pepper and cook for 1 minute more.</font></p> <p><font size="3"> Lower the heat and stir in the yoghurt, a little at a time. When all of it has been incorporated into the spice mixture, return the meat to the casserole. Stir to coat, cover tightly and simmer over a gentle heat for 40-45 minutes until the meat is tender. Meanwhile soak the rice in a bowl of cold water for 15-20 minutes.</font></p> <p><font size="3"> Preheat the oven to 160 degree Celsius. Drain the rice, place in a pan and add the hot chicken stock or water together with a little salt. Bring back to boil, cover and cook for 5 minutes.</font></p> <p><font size="3"> Drain the rice and pile it in a mound on top of the meat in the casserole. Using the handle of a spoon make a hole through the rice and meat mixture, to the bottom of the pan. Place the fried onions, almonds and sultanas over the top and dot with butter. Cover the casserole tightly with a double layer of foil and secure with lid.</font></p> <p><font size="3">Cook the biryani in the preheated oven for 30-40 minutes. <li><span style="background-color: white;">Add the chicken coating it well with the masala. Finally, add some water and let it simmer till the gravy thickens and the chicken is tender. </span></li>
